HOP INTO EASTER!

Our favourite time of year is here, a day full of chocolate, treats and easter egg hunts.

For me, the best part of Easter is the chance to get creative. Whether you are into arts, crafts or baking there are many activities that you can get involved in.

Although seeing how many chocolate eggs you can eat will seem like the biggest challenge, why not try out some new recipes to avoid that Easter egg burnout. It’s the perfect opportunity to experiment with different ingredients and add an egg-stra special twist to all your favourite bakes!

I have a selected a few of my favourite Easter themed recipes for you to try this year!  

Sheep Cupcakes

Ingredients

1 batch buttercream frosting

1 batch royal icing

12 vanilla cupcakes

Pink sprinkles and nonpareils

Star and leaf piping tips

Black edible marker

Method

  1. Place coupler in piping bag and fill with buttercream. Fit with star tip. Thin royal icing out so it is slightly runny, then transfer to piping bag or resealable bag.
  2. Using buttercream, pipe border around cupcakes, leaving a circle about the size of a quarter in the middle.
  3. Snip end off of bag with royal icing and fill center holes of each cupcake, using a toothpick to get into all spaces and cover the cupcake completely.
  4. Swap out tip on piping bag to a leaf tip; pipe ears on each cupcake and place a sprinkle on each.
  5. Once royal icing is set, use small dab of it to stick on nonpareil for nose. Use marker to draw on eyes.

Chocolate Nests

Ingredients

12 oz. chocolate chips

3/4 c. smooth peanut (or other nut) butter

5 c. chow mein noodles (10 ounces)

Candy-coated chocolate eggs

Directions

  1. Line large rimmed baking sheet with waxed paper. In 4-quart saucepan, melt chocolate chips and nut butter on low, stirring constantly, about 5 minutes.
  2. Place chow mein noodles in a large bowl. Pour chocolate mixture over noodles; stir well to coat.
  3. Onto prepared sheet, drop 2 tablespoons mixture to form mound; repeat with remaining mixture. Shape into nests. Refrigerate until set, about 30 minutes.
  4. To serve, fill nests with chocolate eggs. Makes 24 nests
