Ready to find a healthier you? The 10th to the 14th June is Healthy Eating Week and here at Escapade we are huge foodies – although not always for the most nutritious options!
For us, this is a perfect reason to take more consideration of what changes we can make to ensure we are looking after our physical and mental wellbeing – although the odd treat doesn’t hurt!
To start Healthy Eating Week the right way, here is some inspiration for some tasty recipes with a healthy twist.

Tomato Salad
Ingredients
- 1 small red onion, thinly sliced (about 1 c.)
- 1 Tbsp red wine vinegar
- 2 tsp honey
- 1/2 tsp Dijon mustard
- 3 Tbsp extra-virgin olive oil
- Kosher salt
- Freshly ground black pepper
- 2 lb ripe tomatoes, cored, cut into 1/2″ wedges
- 4 oz feta, crumbled 1/4 c.
- 1/4 c finely chopped fresh herbs, such as tarragon, parsley, mint, and/or basil
Step 1: In a medium bowl, cover onion with ice water. Let sit, stirring occasionally, until flavour is mellowed, about 10 minutes. Drain and pat dry.
Step 2: Meanwhile, in a large bowl, whisk vinegar, honey, and mustard until combined. Whisking constantly, slowly stream in oil until emulsified; season with salt and pepper. Add tomatoes, gently stirring to coat. Let marinate at room temperature for 5 minutes.
Step 3: Add feta, herbs, and onions to salad and gently toss to combine. Serve immediately.
Green Goddess Gnocchi
Ingredients
- Kosher salt
- 1 (8-oz.) container crème fraîche
- 1/2 c. fresh dill, plus more for serving
- 1/2 c. packed fresh basil leaves, plus more for serving
- 1/4 c. fresh tarragon leaves
- 1/4 c. sliced fresh chives
- 1/2 lemon, juiced
- 2 c. chopped asparagus
- 2 c. sugar snap peas, trimmed
- 1 (16-oz.) pkg. fresh gnocchi
- Finely grated Parmesan, for serving
Step 1: Bring a large pot of salted water to a boil. Prepare an ice bath by filling a large bowl with ice water.
Step 2: Meanwhile, in a blender, blend crème fraîche, dill, basil, tarragon, chives, lemon juice, and 1/2 teaspoon salt until finely chopped.
Step 3: Cook asparagus and peas in boiling water until bright green and crisp-tender, 1 to 2 minutes. Using a slotted spoon or spider, transfer vegetables to ice bath; reserve water in pot.
Step 4: Return water to a boil. Cook gnocchi, stirring occasionally, until they float to the surface according to package directions. Reserve 1/2 cup pasta water. Drain pasta and return to pot.
Step 5: Add pasta water to sauce in blender 1 tablespoon at a time and blend until a silky texture forms. Drain vegetables and add to pot with gnocchi. Add sauce and toss to combine.
Step 6: Divide gnocchi among bowls. Top with Parmesan, dill, and basil.
